Banana, Date & Walnut Cake

I have been waiting for the weather to warm up and for summer to arrive, however with the current weather situation I feel it’s more appropriate to have a picnic with a flask of coffee accompanied by a lovely refined sugar free banana cake.

This cake is lovely and moist just what you would expect when using these tasty ingredients.



200g self raising flour
1tsp of baking powder
1tsp of cinnamon
2 bananas
5 medjool dates
A handful of raisins
A handful of walnuts
1/2 cup of coconut oil
1tsp vanilla extract
Small amount of water


Mixed together the flour and baking powder with a small amount of water until it forms a runny batter mix like consistency
Mashed the banana and add to the mixture
Chop the dates, then add the dates, raisins and walnuts to the mixture
Add the coconut oil, vanilla extract and cinnamon
Mix all of the ingredients together in the bowl
Pour the mixture into a lined loaf tin
Bake at 200C/ 400F for about 1/2 an hour or until cake is cook all the way through and the skewer comes out clean
Remove and place on a cooling tray

Relax and enjoy this delicious cake either hot or cold

A little tip, it tastes better the following day when all of the flavours have infused
