Sugar & dairy free mushroom soup

I really like this soup, it’s so simple to make and great to have on a cold winters day. After recently talking to a friend she expressed to me that if recipes have too many ingredients or it is time consuming then she is not interested. I have to agree with this, I want something that tastes good with little effort. Hope you enjoy this quick and easy soup!!


2 Onions

2 Garlic cloves

1 Large potato

500g Mushrooms

1.5 Litres of sugar free vegetable stock (i.e. a Bouillon or alternative)

Salt and pepper


Chop the ingredients into small pieces

Fry the mushrooms, onions, garlic and potato in a little coconut oil for 5 minutes or until soft

Add the stock and bring to the boil

Cover and simmer for 20 minutes

Remove from heat and blend the soup until creamy

I like to fry a few mushrooms to place on the top but this is optional, enjoy this tasty soup with some home made sugar free bread.
