How to make a Courgette Rosti
I feel as though Autumn has finally arrived. The air is cooler, the leaves are changing their colours and I’m ready to start wearing my winter coat. So after walking Bella on a chilli morning, I’m thinking about what to have for lunch. Normally I tend to choose a warm lunch through the winter months, mostly soup. However I’ve decided to try my own variation on the trational Swiss Rosti, making mine from courgettes. This is a great lunch for everyone.. fab as a weekend brunch or a great snack if eaten cold. Whichever way you choose to eat your lovely Rosti I’m sure you and maybe your little ones will enjoy it. Choose your own topping fried egg, smoked salmon, scrambled egg and bacon.
