How to make a Courgette Rosti
I feel as though Autumn has finally arrived. The air is cooler, the leaves are changing their colours and I’m ready to start wearing my winter coat. So after walking Bella on a chilli morning, I’m thinking about what to have for lunch. Normally I tend to choose a warm lunch through the winter months, mostly soup. However I’ve decided to try my own variation on the trational Swiss Rosti, making mine from courgettes. This is a great lunch for everyone.. fab as a weekend brunch or a great snack if eaten cold. Whichever way you choose to eat your lovely Rosti I’m sure you and maybe your little ones will enjoy it. Choose your own topping fried egg, smoked salmon, scrambled egg and bacon.
300g grated courgettes
2 tsp plain flour
20g grated cheese
1 tbsp of cream (this is optional)
1 tbsp of vegetable oil
Season to taste
Firstly grate your courgettes then place them on a clean tea towel and squeeze to remove liquid
Pour all of your ingredients into a bowl and mix well
Spilt the mixture in half and roll into a ball then flatten in the palm of your hand to make thick patties
Heat the oil in a frying pan over a medium heat. Cook for 5-8 minutes on each side.
Remove from the heat and enjoy!
Due to this recipe being so quick and easy to make why not swap the courgettes for potatoes or carrots, the variations are endless, add bacon and onions if you would prefer.
