Muesli

This week we found ourselves on a road trip with the caravan and having to stop a few times before reaching our destination. Because of this time was rather limited so I decided to prepare this tasty muesli in advance which gave both Mr P and I a chance to have a healthy breakfast before hitting the road again.

Recipe

1 cup of medjool dates
1 cup of oats
1 cup of mixed seeds
1 cup of dried fruit
1/2 cup of chopped nuts
1/2 cup of coconut oil, melted

Method

Blend dates until it forms a paste.
Remove mixture from the food processor and mix in a bowl with the oats, dried fruit, nuts, seeds and melted coconut oil.
Press into a lined baking tray and put in the fridge for an hour or until firm, break into small chucks ready for a healthy, tasty breakfast.

 

You can also experiment with what’s in your cupboards, add a variety of all different fruits and nuts. This is a quick, tasty, satisfying breakfast which I’m sure you will enjoy!
