Stuffed Courgettes

With summer fast approaching and the weather getting warmer I am aware I probably need to ditch my wholesome winter food and choose some nice veggie dishes, one of my firm favourites is stuffed courgettes. These tasty vegetables are low in fat and contain very few calories, you’re looking at about 17 kcal per 100g (not including added extras e.g. cheese), this is due to their high water content, they also contain potassium and vitamin C.

Ingredients

2 courgettes halved lengthways

4 mushrooms

1 onion chopped

4oz grated cheese (extra)

1 tbsp coconut oil

Salt and pepper to taste

Method

Heat oven to gas 5, 375 C, 190 F

Use a spoon to scoop out the middle of the courgettes, then place them on a baking tray

Chop the onion and mushrooms and add to the courgette mixture

Put the coconut oil in a pan and melt over a low heat

Add the mixture to the pan and lightly fry for 5 minutes

Remove from heat and spoon mixture into your courgettes

Grate the cheese and sprinkle on the top

Add a pinch of salt and pepper

Bake for 25 minutes or until tender

Remove and serve
